Ingredients

A can of Mayor Pelati Tomato (drained and chopped)
1 onion (chopped)
1 can of Mayor Tomato Sauce
1 cup water
1 tbs Three Hills Kunserva (tomato paste)
4 green peppers
450g (1LB) minced beef (or ground)
1 cup of cooked instant rice (cooked)
Fresh basil
Salt & Pepper

Method

In a large saucepan, combine the tomatoes, onion, tomato sauce, water, some salt and pepper. Bring to a boil. Reduce heat and simmer 10-15 minutes. Meanwhile, cut tops off of green peppers and remove seeds; set aside.

In a large bowl, combine the ground beef, rice, basil and some more salt and pepper. Fill peppers with beef mixture. Carefully place peppers in tomato sauce. Spoon some sauce over tops of peppers.

Cover and simmer for 40-45 minutes or until beef is cooked and peppers are tender.

This dish is a comforting and hearty meal, and it's a classic example of the delicious and homely flavors found in Maltese cuisine.
