Maltese Baked Rice Recipe
Ingredients:
2 cans of diced tomatoes
6 cups of milk
5 hard boiled eggs
1 cup of parmesan cheese
4 large eggs
1 medium size eggplant
2 medium size onions
3 large carrots
3 pieces of Canadian bacon
1 lb of long grain rice
1 lb of ground beef
Instructions:
Bring 10 cups of water to a boil and add rice
Cut off the fat from the Canadian bacon, cut into small pieces, and set aside
Dice onions and set aside
Peel and dice eggplant and set aside
Peel and chop carrots and set aside
Add oil to pan and sauté onions on medium heat
Add carrots and eggplant and stir
Cook until sautéed
Add bacon and ground beef and cook until meat is browned
Add cans of tomatoes and stir
Add tomato paste to taste
Let cook for 20 min
Slice eggs and set aside
Whisk raw eggs and add to cooked rice
Add parmesan cheese, sautéed meat and vegetables, and milk to the cooked rice and stir

Pour other half on top and add cheese
